White Chicken Chili

This winter is shaping up to be a lot like last year's.  We haven't had as much snow, but it's been freezing.  We've already had a couple week's worth of single digits / negative windchill days.

And when it's sooooo cold out, chili just hits the spot.

So lately, I've been making lots of different chilis: veggie chili, taco chili, our family recipe, and this amazing white chicken chili that I found on Pinterest from Cooking Classy. I just changed up a few things to suit our tastes.  It's a family favorite!


White Chicken Chili

Ingredients:

1 lb. boneless skinless chicken breasts, cut into 4-6 pieces
1 onion, diced
1-2 Tbsp. olive oil
1/2 tsp. garlic powder
2 (14.5 oz.) cans chicken broth
1 (4 oz.) can diced green chilies
1-1/2 tsp. cumin
3/4 tsp. paprika
1/2 tsp. oregano
1/2 tsp. ground coriander
1/4 tsp. cayenne pepper
salt and pepper, to taste
1 (8 oz.) cream cheese, cut into cubes
1-1/4 cup corn (fresh, frozen, or canned, drained)
2 (15 oz.) cans cannellini or great Northern beans, drained and rinsed
Corn chips
Saltines
Tortilla chips

Directions:

1.  Slowly cook chicken and olive oil over low/medium heat in a Dutch over.  Sauté until no longer pink and a fork can split them easily.  Shred chicken with two forks. 

2.  Add onion to chicken and cook until onion is soft.  Add garlic and continue cooking for 1 minute, stirring often.

3.  Add chicken broth, green chilies, and the rest of the spices.  Bring to a boil.  Then reduce heat and let simmer uncovered for 15 minutes.

4.  Add cream cheese and stir until melted.  Once completely melted, stir in corn and 1 can of white beans.

5.  Put 3/4 of the second can of beans and 1/4 cup of the broth from the cooking soup in a blender.  Purée.

6.  Add remainder of beans and bean purée to the soup.  Simmer for another 15 minutes.

7.  Serve hot with saltines or tortilla or corn chips.  Enjoy!

Notes:  You can skip puréeing the beans and just add them straight into the soup.  If you skip this step, the soup will not be as creamy.

Also, this is amazing with corn chips.  Just letting you know. ;)

I also love it because it's just spicy enough for the adults, but not too spicy for the kids.  So we all love it.  Hope your family enjoys it too!

  1. Totally agree on chili for the coldest days. This one sounds great - I like the spicy enough for adults but not too spicy for kids... lately Hendrik has been refusing some food and then I realize whoops, that might be a bit spicy for him. I think he'd love this though, and anything that tastes good with corn chips is a major hit with my hubby, so I think we'll have to try :) Thanks so much for linking up again!
